I have always loved food and cooking. I have fond memories of learning to cook with my mother at a young age and I’m now teaching my own daughter, who’s five. As I grew up and started to travel, I loved to sample new dishes, recreate them back at home and make them my own. However, in the past, my favorites have not always been the most healthy!

Now, a little older and more conscious of health issues, I have developed an interest in creating low-fat, low-cholesterol recipes for myself and my family. You won’t find any calorie counting or dieting tips here, I’m not trying to lose weight, just live a little more ‘fat and especially cholesterol’ free!

From my experience though, low-fat can sometimes mean low in taste and, let’s face it, pretty dull at times. Whilst striving to eat right, I don’t want to feel as if every meal in an exercise in self-denial. My family still wants to enjoy delicious, tasty food.

So now I’m on a mission to rework my favorites dishes, collected over the years and create and explore new ones. I try to avoid red meat and full-fat dairy products, especially cheese. I try to include plenty of fruit and vegetables, lean meat, fish, low-fat dairy products and some vegan foods.  

My recipes are simple and quick to prepare. I may wish to spend hours in the kitchen for a special occasion but no one has time for that mid-week. I hope you enjoy my blog!

  1. Great idea – when you gave up red meat and cheeses did you have a yearning for bacon and some really ripe camembert – I couldn’t be that disciplined, and sadly love my steak and so on!! Does Niamh like making cakes?

  2. I don’t miss red meat at all but I do miss cheese!! A lot! I think a trip to France would be the ultimate test of my will power. Niamh loves making cakes, we’ve been doing it since she was about two (much less messy and easy now!). Knowing how to cook is one of the skills I really want to pass on to her and she really enjoys it. We make them with healthier ingredients mostly or I make brownies for her and her Dad.
